Teriyaki Shiitake Hand Rolls

Yield: 8 - 12 rolls
Time: 20 minutes (plus rice cooking time)

Like your sushi bar favorites without any of the fuss!


2 Tbsp soy sauce

1 Tbsp mirin

1 Tbsp sesame oil

1/2 lb. shiitake mushroom, stems removed and cut into wide strips
4-6 nori sheets (halved)

1/2 avocado, cut into strips

1 small cucumber, cut into thin strips

1 cup sushi rice

1/4 cup rice vinegar

2 Tbsp sugar

1/2 tsp salt



Cook sushi rice per package directions. In a small sauce pot combine vinegar, sugar, and salt over low heat stirring frequently until sugar is dissolved. Remove from heat and set aside. Once the rice is cooked and the vinegar mixture is cooled to room temperature combine them both, being mindful not to over-mix.


Heat a medium skillet over medium heat. Add soy sauce, mirin, and sesame oil; stir to combine. Add mushrooms and sauté until softened.


To assemble: lay the shiny side of the nori face-down, add a small spoonful of sushi rice to the lower lefthand corner of the nori, to the rice with avocado, cucumber, and mushrooms. Roll from the lower left corner to the upper right to form a cone-shape.


Serve with your favorite sushi accoutrements.
