Raspberry Basil Soda


Yield: approximately 2 cups syrup and endless uses!
Time: 20 minutes

Not your average soda. Super simple syrup makes the perfect summertime beverage, no matter how you mix it.


For the raspberry simple syrup:
1 cup raspberries (I like fresh for the best flavor)
1 cup water
1/2 cup cane sugar

For each soda:
Fresh basil
Club soda



For the simple syrup: combine raspberries, water, and sugar in a small saucepan over medium heat. Bring to a soft boil, reduce heat and simmer for 10-15 minutes, stirring frequently and allowing the raspberries to fall apart. Remove from heat and allow to cool. Transfer to an airtight container and store in the fridge for up to two weeks. (You can choose to strain out the seeds and pulp if you would prefer a smooth syrup.)


For each soda: add 2 tablespoons of syrup to a glass with 1 large bail leaf, torn into pieces. Muddle syrup and basil, add ice, and top with 8-10 ounces of club soda, stir well. Sip and smile.
