Chocolate Cherry Chia Pudding

Chocolate Cherry Chia Seeds

Yield: 4 servings
Time: 5 minutes, plus chilling time (3 hours to overnight)

For all your chocolate craving needs: rich, creamy, and deceptively easy! (Inspired by the Minimalist Baker.)


INGREDIENTS

1 1/2 cups unsweetened nut milk (I used almond)

1/4 cup raw cacao powder

3 Tbsp maple syrup

1/2 tsp ground cinnamon

1 pinch sea salt

1 tsp vanilla extract

1/2 cup chia seeds

1/2 cup frozen dark cherries (unsweetened), roughly chopped

1/4 cup crushed raw, unsalted cashews


DIRECTIONS

STEP 1

Combine milk, cacao powder, maple syrup, cinnamon, salt, and vanilla extract in a blender. Blend to combine fully.

STEP 2

In a mixing bowl add liquid mixture to chia seeds, stir to combine well. Cover and refrigerate for several hours until starting to set, restirring as needed.

STEP 3

Before stirring top with cherries and cashews. Dig in!
